
No Added Sugar Banana & Choc Cheesecake Muffins (Banting, Keto, Diabetic, Glutenfree)

A dreamy blend of cottage cheese, cocoa, and a hint of banana—topped with a silky no-added-sugar chocolate shell. Just 2.9g net carbs each!

INGREDIENTS:
For Cheesecake Filling:
1 tub (250g) full-fat cottage cheese
½ ripe banana (approx. 55g)
1 tbsp unsweetened cocoa powder
3 tbsp Martinnaise sugar-free maple syrup
1 tsp vanilla extract
2 large eggs
For Chocolate Coating:
70g Caring Candies Milk Chocolate
1 tbsp coconut oil
INSTRUCTIONS:
- Preheat oven to 170°C (fan) and line a muffin tray with 7 silicone or paper cases.
- In a blender, combine the cottage cheese, banana, cocoa powder, maple syrup, vanilla, and eggs and blend until smooth.
- Pour the mixture evenly into the muffin cases and Bake for 20–25 minutes, or until just set in the centre.
- Let cool completely, then refrigerate for at least 30 minutes to firm up.
- Melt the sugar-free chocolate and coconut oil together until smooth.
- Once the cheesecakes are chilled, spoon or drizzle chocolate over the tops to coat.
- Let them set in the fridge until firm.
Enjoy straight from the fridge — creamy, chocolatey, and lightly sweet with a subtle banana note!
