INGREDIENTS (MAKES 6 COOKIE CUPS):
Dry Ingredients:
• 1 cup almond flour (fine)
• ¼ tsp baking soda
• Pinch of salt
Wet Ingredients:
• 60g unsalted butter, melted
• ¼ cup erythritol or xylitol (adjust to taste)
• 1 egg
• ½ tsp vanilla extract
Chocolate:
• 1 x 50g Caring Candies Milk Chocolate Bar, chopped into chunks
INSTRUCTIONS:
- Preheat oven to 175°C (fan 160°C). Grease or line a 6-hole muffin tray with silicone or paper liners.
- Mix dry ingredients in a bowl: almond flour, baking soda, and salt.
- In another bowl, whisk melted butter, sweetener, egg, and vanilla extract until combined.
- Fold the dry ingredients into the wet mixture until a dough forms.
- Gently stir in chopped Caring Candies chocolate, saving a few chunks for topping.
- Scoop dough evenly into muffin holes. Press lightly to shape into cup-like mounds. Top with remaining chocolate chunks.
- Bake for 10–12 minutes, or until golden around the edges. The centers will look soft – that's perfect!
- Let cool in the tray for 10 minutes before transferring to a rack to set completely.
