No Added Sugar Peppermint Crisp Tart (Banting, Keto, Diabetic-friendly)
This is a proper South African classic, done the Caring Candies way. Rich, creamy, minty and indulgent, without the sugar.
You’ve got a nutty almond-coconut base, a smooth caramel layer, and a light whipped filling packed with mint chocolate and crunchy toffee mint pieces. It hits all the right notes and still fits a low-carb lifestyle.

Ingredients
For the Base
- 375ml almond flour
- 30ml xylitol
- 60ml salted butter (melted)
- 60ml desiccated coconut
For the Caramel
- 80ml salted butter
- 80ml double thick cream
- 30ml xylitol
For the Filling
- 3 Caring Candies Mint Chocolate Bars (grated)
- 375ml whipping cream
- 45g Caring Candies Toffee Mint Little Lovies (crushed)
Method
Base
- Preheat oven to 180°C.
- Mix almond flour, xylitol and coconut in a bowl.
- Add melted butter and combine until evenly moist.
- Press firmly into a pie dish.
- Bake for 8–10 minutes until lightly golden.
- Remove and allow to cool completely.
Caramel
- Melt butter in a non-stick pan over medium-low heat.
- Cook until it turns a light golden brown.
- Add cream and xylitol, whisking continuously.
- Cook for about 1 minute until thickened and slightly sticky.
- Remove from heat and let cool slightly. Keep it warm but not hot.
Filling
- Refrigerate chocolate bars, then grate or chop finely.
- Crush the toffee mint humbugs in a bag using a rolling pin.
- Whip cream until just before stiff peaks.
- Fold in caramel, ¾ of the chocolate, and ¾ of the crushed sweets.
- Spread evenly over the cooled base.
- Top with remaining chocolate and crushed sweets.
Finish
- Chill for 1–2 hours before serving for best texture.
- Slice and serve cold.
Serving Ideas
- Garnish with fresh mint leaves
- Add extra grated chocolate on top
- Serve with a dollop of cream
Tips
- Don’t overwhip the cream, keep it light and airy
- Caramel must be slightly warm when folding in
- Chill time improves structure and flavour
